Cha Cha, also known as chow chow relish, is traditionally made with a mixture of pickled garden vegetables. Depending on the recipe, that might include green tomatoes, cabbage, peppers, and onions.
Usually, chow chow sits alongside beans, greens, meats, and other Southern staples. But there’s no reason it has to stay politely on the side of the plate.
Why chow chow works on grilled cheese
A good grilled cheese needs contrast.
Melted cheese and buttery bread bring richness. Meanwhile, Cha Cha brings acidity, crunch, and a little sweetness. Put them together and you get a grilled cheese with chow chow that feels familiar and unexpected at the same time.

Description
This chow chow grilled cheese combines gooey melted cheese, tangy Southern Cha Cha relish, and crisp golden bread. It’s an easy sandwich with the perfect balance of rich, sharp, and crunchy.
Ingredients
2 tablespoons mayonnaise ( can also use salted butter at room temperature)
2 tablespoon salted butter (if using mayonnaise)
4 slices thick cut sourdough bread
1 cup Cha Cha
2 slices of American cheese or 1 cup medium cheddar cheese, shredded
1 cup Gruyere cheese, shredded
Freshly cracked black pepper, to taste
Instructions

Spread the outside of each slice of bread with mayonnaise.

Cook the sandwiches one at a time. Add 1 tablespoon of butter to a hot skillet. Once melted, add 1 piece of bread, mayonnaise side facing down then evenly layer the cheeses, chow chow, more cheese, cracked pepper and top slice of bread, mayonnaise side facing up. Cook until golden on each side, about 3-5 minutes per side. Repeat the process for the second sandwich.
